The original Mexican vanilla is the most authentic vanilla pod, as this orchid family originates from Mexico. The Totonacs were the first to cultivate vanilla and, through the drying process, invented the distinctive vanilla flavor. The flavor profile of Mexican vanilla pods is similar to that of Madagascar vanilla, although Mexican vanilla has a softer, smoother quality and a spicy, woody aroma that gives it a unique flavor profile.
